You Are What You Eat
Yesterday was a glorious day! I even got bold in the kitchen and improvised not one, but two meals. Lunch was a total off-the-top-of-my-head concoction and dinner was a modification of a prior recipe. Our eating habits have changed over the past two years but that change accelerated when our son moved home in September. He's allergic to a large variety of foodstuffs so we have chosen a modified paleo style of eating to accommodate his needs. I say "modified" because there are still a few things I cook for my husband and myself that are off limits to my son.
It's crazy how food allergies have been the source of so many of his physical problems. Eating according to his body's needs has even lifted the brain fog he experienced for years. It's amazing just how complicated the human body is ~ and how complicated that body's relationship is with the physical and chemical world around it. Fascinating stuff. We truly are what we eat.
