Yummy in the Tummy
My son has gone paleo and while we aren't as strict in our lifestyle eating as he is, we are eating some amazing meals together. Last night I prepared scallops and organically grown veggies. So easy. So tasty. So good.
Roasted Veggies:
-cut up carrots and beets (I used red and yellow beets)
-place in baggie with tbsp olive oil + 1-2 crushed garlic cloves and shake
-dump veggies onto aluminum foil covered cookie tray
-roast at 375 degrees for 30-40 minutes (depends on size of veggie pieces)
Asparagus:
-put a few drops olive oil in water for steamer pot
-cut asparagus in 1/2 or 1/3 and steam until al dente
-sprinkle with a few drops of fresh lemon
Scallops:
-fry up 5-6 pieces of nitrate-free bacon / set aside / keep bacon grease in pan
-add 1-2 cloves crushed garlic + dash or 2 of sherry to bacon grease
-place scallops in pan + dash of dried dill on each scallop
-cook until done
-serve on top of cooked bacon pieces
Arrange on serving plate, serve and enjoy!
Tips:
-Entire meal from start to finish about 35-45 minutes. Veggie prep and cooking takes the most time. Start with veggies.
-Cook bacon once veggies in oven but don't start scallops until veggies 3/4 done.
-Don't overcook asparagus. Mushy asparagus is yucky. I cooked it almost at the end of cooking the scallops.
